Spiced Vegan Chocolate Mousse.

I believe in being kind to myself, self compassion, mindfulness, yoga and meditation are central to my life. I try to eat sensibly...it doesn’t always work, so here I have mixed my favorite thing… chocolate, with some warming healthy spices to give a lightly spiced, delicious chocolate mousse. Turmeric is an amazing spice, it has been shown to fight infection and is packed full of magical anti-inflammatory properties. This is honestly good for you! Enjoy. X

Ingredients & Method.

200g of good quality organic dark chocolate.

240 ml aquafaba from 400g tin of chick peas.

1 teaspoon of lemon juice.

50mls of coconut cream.

1 tablespoon of honey.

1 tablespoon of agave syrup.

A generous splash of espresso coffee.

1 teaspoon of turmeric,

1 teaspoon of cinnamon

½ teaspoon of ginger.

Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water. Break the chocolate into the bowl and allow it to melt slowly.

Gently stir in the honey, agave syrup, splash of coffee, coconut cream and sieved mixed spices.

Using an electric egg whisk, whisk the chickpea water with a teaspoon of lemon juice into stiff peaks, this takes longer than if you were whipping egg whites, between 10 -15 minutes, aquafaba cannot be over whipped, so be patient.

Gently fold the chocolate mixture into whisked aquafaba and spoon into serving glasses.

Chill in the fridge overnight, or if, like me, you are impatient, a few hours.

Decorate with some mixed berries of your choice and enjoy...it’s honestly good for you. X
